Sausage meat was inserted into the tin cylinder and propelled downward by a push of the plunger and forced through the nozzle at the end, which would have a sausage encasement attached.

According to 300 Years of Kitchen Collectibles (Franklin 67) and Kitchen Antiques (Johnson 79), a sausage stuffer (gun) of this type, tin cylinder and wooden plunger, was used most often during the late 1800's. Sausage guns made entirely of wood were dated up through the mid 19th century whereas the aluminum guns were utilized in the early to mid twentieth century.
