Description
This English recipe book was compiled by an unknown individual, approximately between 1815 and 1831. The book opens with a copy of William Fleetwood Varley’s “A few observations on art with notices relative to the various exhibitions, repositories of art, &c. &c.” (pages i-xxi). One hundred and forty-four culinary, household, and medical recipes follow on pages 1-160, some written in French (pages 20, 43, 45-48, 86-89, and 143). The culinary recipes include pig’s face cheese (page 8), marmalade de pompom (page 43), salmi (page 45), Guernsey hearts (page 59), mock turtle soup (page 60), spiced round of beef (page 74), and beignets de pomme (page 88-89). There is also a recipe from the author's “journey through Norway, Sweden, and Denmark” (pages 102-103). Some of the recipes are attributed to various individuals, including Dr. Bishop (page 3), Miss Guille (pages 40, 145, and 159), Mr. Sausmarez (page 43), Monsieur Espinasson (page 47), Colonel de Havilland (page 49), Aunt John (page 51), Mrs. Barlow (page 52), Mrs. Brett (page 60), Reverend W.
