Description
This collection of recipes accompanied a mid-nineteenth century plantation register kept by Mathurin Guerin Gibbs, and thus may have been created by his wife, Maria Louisa Poyas Gibbs. It includes directions for preparing a number of traditional meat and vegetable dishes, as well as a few items of local flavor, including "shrimps," rice biscuits, and rice waffles.

Maria Louisa Poyas (1803-1893) was the daughter of John Ernest Poyas (1756-1821). She married Mathurin Guerin Gibbs (1788-1849) in 1824. The Gibbs family resided at Rice Hope Plantation on the western branch of the Cooper River by 1840, but removed to Jericho Plantation in St. James Santee Parish in December 1844.
