Description
This anonymous English recipe book, compiled in 1836, contains a table of contents numbered 1 to 40 on the inside front cover and over forty culinary and household recipes written on the first fourteen leaves of the notebook. The remainder of the notebook is blank except for a single medical recipe. The culinary recipes cover meat and fish dishes, pickled foods, sauces, desserts, and cakes. The book is notable for its many South Asian recipes utilizing chilies or essence of chilies, including chutney, koftas, pickled mango, pulao, Tapp sauce, and tomato sauce. There are also recipes for mock lobster, oyster sauce, German puffs, macaroons, shortbread, apricot jam, and bitters. The book includes instructions for cold creams and powerful freezing mixtures.
