Description
This recipe book was compiled by an unknown author, who was likely Scottish, during the years spanning 1804 to 1844. The volume is mostly composed of culinary recipes but also contains a few medical and household recipes. There is a table of contents is at the beginning of the volume. The culinary recipes cover beverages, breads, cakes, cheeses, fish dishes, meat dishes, fruit preserving, jellies, pickled foods, puddings, and soups. Among the recipes are Duke of Buckingham's pudding, Highland pudding, and almond pudding; oyster soup and green pea soup; cream cheese; lemon cheesecakes; and cherry brandy, cowslip wine, and ratafias. Several recipes call for gooseberries, and there are a number of recipes for veal dishes. The household recipes include instructions for cleaning a black silk dress and making furniture oil and permanent ink. Many recipes are attributed to Mrs. Vachell and Mrs. Gosselin, both of Waterford, and Mrs. Kellett of Wexford; some recipes are said to hail from Glasgow. A recipe for Hamburg Beef is credited to Colonel Madden of the Monaghan Militia.
