Description
This volume of 66 leaves is inscribed "Abigail Rand her book" on the first leaf and also signed at the first recipe. The manuscript presents a wide-ranging selection of late 17th/early 18th century English recipes, including collars of veal and beef; sauces for turkey, capon, pheasant, boiled chicken, and wildfowl; fish dishes; lobster roasted on a spit; beef a la mode; a florentine of beef olives (rolls) covered with puff pastry; sweet chicken pie; humble pie; minced pies; potted beef; a number of pickles (two poultry, the rest vegetable); many puddings; and a handful of cakes.
