This anonymous English recipe book, compiled around 1865, is titled "Receipts for cooking" on the first page. The recipes outline a range of foods, including fish dishes, meat dishes, preserved foods, sauces, catsups, syrups, vinegars, puddings, biscuits, cakes, fruit preserves, and wines. Among the savory recipes are mushroom powder (to flavor sauces and other dishes), salad dressing, potted shrimp, potted lobster, and Adelaide sandwiches, which are dainty chicken and cheese canapes popularized by celebrity chef Charles Elme Francatelli (1805-1876). In addition, there are sweet recipes for various blancmanges; Canterbury, Clifton, and honeycomb puddings; Bath, Brighton, captain, chocolate, fruit, and Italian biscuits; bride, gingerbread, Madeira, queen, sultana, and Yarmouth cakes; and gooseberry "cakes." Recipes for ginger, Imperial, orange, and raspberry wines are also included.
