Description

Written in a leather-bound notebook measuring 8 1/2 by 5 inches, this 78-page cookbook was kept by Prudence M. Sutherland in Petersburg, Virginia. A recipe for Sweet Pickle is dated 1892. The book is collected with a number of loose recipes at the front, most of which are on clippings. Many clipped recipes, mostly for pickles, desserts, and cakes, have also been pasted in to the book. Accounts are written throughout the book, with names, amounts, and notes indicating if the accounts have been paid.

Most of the recipes in the book outline pickles, cakes and breads, puddings, and other sweets.

The pickles include Oil Mangoes, Yellow Cabbage Chow Chow, Yellow Pickle, Cucumber Catsup, Sweet Pickle Damsons, Tomato Catsup, Tomato Sauce, Preserved Pickles, Sweet Pickle Peaches, and Watermelon Rind.

Among the cakes and breads are: Tea Cakes, Molasses Pound Cake, Boiled Icing, Indian Pound Cake, Sally Lunn, Orange Cake, Cream Cakes, Flannel Cakes, Butter Sponge Cake, Lightning Cake, Cocoanut Cake, Cakes without sugar (including Velvet Cake, Batter Bread, Flannel Cakes, Buttermilk Cakes), Family cake, Variegated Cake, White or Brides Cake, Fruit Layer Cake, Cream Crackers, Soda Crackers, and Muffins.

The puddings comprise Cocoanut Pudding, Lemon Pudding, Citron Puddings, Potato Pudding Boiled, Boiled Black Cap Pudding, Carrot Pudding, Bombay Pudding, Almond Pudding, Cupful Pudding, Marmalade Pudding, Irish Potato Pudding, Grey Pudding, and Jeff Davis Pudding [a type of chess pie, named for Jefferson Davis, the president of the Confederacy].

The desserts outlined are Jelly [gelatin], Congealed Custard, Apple Custard, Apple Trifle, Ice Cream (economically made), Orange Cream, Italian Cream, Charlotte Russe, Cold Cream, and Preserve Peaches.

In addition, there are a few recipes for savory dishes (Potato Rissoles, Rumbled eggs); candies (Cream French Candy, Peppermint Candy, Cocoanut Candy); and drinks (Currant Wine, Blackberry Cordial, Blackberry Wine). There are also some household and medical recipes, including To Make Cologne, Lineament for Chapped Hands, Cure for Neuralgia, Eau Sans Parulle, Rose Oil, Cure for Diarrhea, Scattering Salve, Mrs. Paul’s Salve for the Breast, and yellow and purple dyes.
