Dr. Walter Wing (1787-1855) lived in Morris, New York, and practiced in nearby Butternuts. He inscribed his book “Dr. W. Wing, Butternuts, Otsego Co. N. Y.” His 170-page book is primarily given over to cures for humans and animals, but it also contains forty-three culinary recipes as well as ten recipes for household products, brewing, and winemaking. Although Dr. Wing began his book in 1813, the culinary recipes may be somewhat later, as many are credited to various newspapers, including the Otsego Republican, the Lutheran Observer, the Greenfield Herald, and the Philadelphia Courier, with dates between 1830 and 1846.
The culinary recipes include Potatoe Yeast, Recipe for Making Cider Without Apples, Rev. Abr. Monie's Tomato Catsup, Pickle Hams, Boston Cake, Thanksgiving Tea Cake, Tomato Tart, Toast Tea, Indian Bread—The Very Ne Plus Ultra of Indian Bread, To Make Rice Bread, and Beef Steak Rolls.
