Description

This item is the second of two account books kept by James Kilham, of Turin, New York, between 1842 and 1880. The back of this volume contains 11 pages of recipes, forty-four of which are culinary and eleven of which are medical, household, and brewing. The recipes contain dates of 1859, 1861, and 1871. Among the culinary recipes are Hop Yeast; A Receipt for Making Sausage Meat; Sweet Apple Pudding, Nottingham Pudding, Egg Pudding, and Buttermilk Pudding; Vinegar Pie and Cider Pie ("As the season for cider is at hand, I will send you a recipe for cider pie which we think is excellent."); Pickled Apples (as well as pickled pears, cherries, and peaches); Crullers, Carolina Cake, and Old Maid Cake ("A few private houses, far apart, like currants in an old maid's cake"); and Drying Currants, Tomatoes, &c. In a receipt for Cookies, the author notes, "My husband thinks they can't be beaten so they must be good." A Receipt to Make Life Drops is credited to Beal P. Downing, family physician.
